On her decision to change direction
Annabel Langbein is letting us in on a little secret.
‘The trick to a perfect scone is not to work the dough too much. Keep it moist,’ she advises, practising what she preaches and deftly mixing flour, cheese, buttermilk, chopped spinach and salt into a somewhat gloomy-looking dough.
And here’s another suggestion:’Sprinkle grated cheese on the baking tray and then place the dough on top. That way you get a wonderful cheesy bottom – yum!’
They are crispy on the outside and soft and fluffy on the inside? A testament to why Annabel is among New Zealand’s most treasured book authors.
Her Wanaka Cheese Scone recipe is just one of the 10,000 she has produced in 30-plus years of sharing her love of cooking.
Coming up with new and interesting dishes isn’t a chore and there is always a lot to inspire her, including what she is growing in her garden and meals she samples on her overseas travels.
But as much as she loves cooking and creating recipes, the time has come, she says, to try something new.
Don’t panic, though – the popular cook isn’t planning on hanging up her apron for good.
‘But I really do feel that I am ready for a new challenge,’ she says as we sit in the kitchen island in her Auckland home, sampling her delicious scones.
‘I have not necessarily completely identified what that challenge is yet. There are a couple of things I would love to test and I almost feel like it’s a second wind, a second incarnation. I am a naturally curious person and I’d like to see what other opportunities there are.’
Annabel’s been branching out from writing cookbooks to penning travel articles, something she would like to do more frequently.
Another direction she might head in – and she’s already gone quite a long way down this route – is focusing on how to help people lead more sustainable lives.
An inspiration for all
If you don’t like to cook, you’ll certainly want to try one of Langbein’s recepies, while her duty is to make kitchen and cooking accessible and easy to everyone. Her meals are healthy and tasty. Every cuisine production by Annabelle is cooked of fresh seasonal ingredients.
And we are not surprised with it because she spent her early life off the property cooking over an open flame when being a foundation member of the Sustainability Council of New Zealand.
Annabelle Langbein has her fans in the United States and UK, too. She used to write for a few magazines and even appeared on The Today Show in the United States and Saturday Kitchen in the UK. Langbein’s multiple awards state that people’s love toward her is unlimited. Back in 2016, she won the People’s Choice Award for Best Home Chef at a TV Series at the Taste Awards in the USA.
Her multiple cookbooks are entertaining and not dull, and almost the entire world loves her receipts. And all of the awards for those cookbooks prove it.
